Festive Finger Food: Ways to Use Christmas Remains into NYE Appetizers
What types of canapes can I whip up for New Year’s Eve using my Christmas remaining food that will still seem festive?
Party snacks needn't be fancy, so New Year's offers a great opportunity to use up what's left. The key rule is to stick to items to just one bite—no one wants to manoeuvre a fork. People are looking for a big hug of comfort food with a decadent twist.
If you have a bit of cured fish left, layer it on mini pancakes and crown it with affordable roe. Mini fishcakes are also an ideal choice: If you have remaining fish or hot smoked salmon, mix it through creamy potatoes, blend with fresh herbs, lemon, and fried leeks, then roll in Japanese breadcrumbs and deep-fry.
You could also have a ball with Spanish croquettes. Make the bechamel up to days ahead, then use leftover ham, poultry, or mushrooms for the interior. Whizz old bread into breadcrumbs to cover them, then fry. Savoury pastry mixtures are another natural home for those crumbs, or use them as a coating for chicken pieces. For flavour, just add a bit of lemon zest and aromatic herbs, and they'll sing so much more. Incidentally, croissants make superb crumbs, too.
One beloved treat at this time of year is a leftovers sandwich, and that can continue after Boxing Day. Place some ham and turkey in an airtight container and store in the freezer. While you're at it, reserve some berry relish and honey ham glaze in the refrigerator. When needed, thaw the meat, then pop it in a preheated oven with the saved glaze for a short time. Let it cool and slice thinly, then arrange on top of some sourdough and start building mini sandwiches with lots of cranberry sauce. Cut into small squares for a surefire hit.
Leftover turkey, meanwhile, could be turned into a zingy salad. You often have a bit of turkey leg left over, and it's ideal for something full of flavour. Pull the meat, then fry it slowly in a pan, and mix with leftover cranberry sauce loosened with lime juice, a spoonful of soy and a little chilli oil. Garnish with fresh herbs and some sliced spring onion, and present in small lettuce cups.
Transforming Remaining Veg
Veg, meanwhile, can be scrubbed up and ready to party with a big batch of bubble and squeak. Mix all your remaining vegetables with herbs, then season and add a binding agent. Stamp out portions to roughly the size of small rounds, then keep in the icebox. Refresh in a preheated oven for a few minutes and top with whatever you like—perhaps roast beef and grated horseradish. A good tip, though: save a stash for brunch the next day.
